EGGS & BEEF SCRAMBLE MEAL PREP / Healthy Low Carb Breakfast with High Carb Alternative






How to MEAL PREP a delicious LOW CARB BREAKFAST for the whole week ahead with a HEALTHY HIGH CARB ALTERNATIVE option available. This hearty Eggs & Beef Scramble can be made 4 days in advance or even frozen as the ultimate make ahead meal for when you’re in a pinch. Also includes a healthy high carb version for a good post workout meal and or if you’re Carb Cycling for fat loss.

————————————————————————————————————————-Eggs and Beef Scramble V1) Keto Breakfast Version
MACROS, per serving (makes 5 servings)
590 Calories, 39 Protein, 11 Net Carbs, 42 Fats

Ingredients:
12 whole eggs
1 lbs 93% Ground Beef
1/2 yellow onion
1 red bell pepper
2 tbsp of unsalted butter or Chicken Fat (preferred)
10 tsp Shredded Mexican Cheese
Sriracha to taste
10 slices Base Culture 7 Nut & Seed Bread

Instructions:
1) Crack 12 whole eggs into a large bowl. Do not whisk or season yet
2) Finely slice 1/2 yellow onion
3) Finely slice 1 red bell pepper
4) Set stove to medium heat
5) In a large non stick pan, add 1 tbsp Chicken fat or Unsalted Butter
6) Add your sliced onions and saute for 5 minutes
7) Add your sliced bell peppers and saute for 4 minutes
8) Spread pepper and onions to the outer edges of the pan leaving the middle exposed
9) add 1 pound of 93% lean ground beef and season with Garlic Powder and Black Pepper to taste. Add 1 tsp of salt
10) mix together with veggies and break down the meat into small pieces
11) cook the beef with veggies for 8 full minutes on medium heat.
12) turn up the stove to high heat and move meat with veggies to the edges of the pan, creating an opening in the center
13) Pour eggs into the pan and start scrambling them immediately
14) When eggs start to thicken, after about 30-40 seconds, remove pan from heat and continue to stirr and scramble off of the heat. Scramble for 30-40 seconds and…
15) put pan back on the heat while scrambling constantly.
16) repeat this process, scrambling on the stove and off the stove back and forth, until eggs are cooked. This should take roughly 4 to 5 minutes. On and Off the heat about 3 to 4 times total.
17) add 1 tsp of salt and mix into the eggs
18) For our keto recipes version, we’ll meal prep low carb breakfast for ALL 5 days of the week. So, we’ll serve 1/5 of the eggs on top of 2 slices of “Base Culture’s” 7 nut and seed bread toast. This is one of my favorite recent discoveries. Each slice has only 4 grams of net carbs and contains 4 grams of protein. If you’re looking for a low carb toast that actually tastes good, I highly recommend you give this a try.
19) Top with 2 tsp of Shredded Mexican Cheese
20) Drizzle sriracha on top

FOR HEALTHY HIGH CARB VERSION:
For a good post workout meal or if you’re carb cycling for fat loss, my favorite bread to use for this is Rosie’s San Francisco bay sourdough bread. 1)Serve 1/5 of the eggs on top of one slice toasted.
2) Top with 1 tbsp of Shredded Mexican Cheese
3) Drizzle sriracha on top
